I got this recipe on my mission from a sweet couple, the Ranieris'. They said it can be used as is, or be used as a base for making Chopino soup. Anyway, it makes a great tomato soup! The butter and onions makes it sweet and yummy. It will cool off here someday so we can start enjoying some good soups!
Tomato Soup
1/2-1 medium onion, chopped
2 T butter
2 cans diced tomatoes, undrained
2 cans condensed tomato soup
1 1/2 C milk, heated
1 t sugar
1/2 t dried basil
1/4 t garlic powder
In a saucepan, sautee onion in butter until tender. Stir in tomatoes, soup, milk, sugar, basil and garlic powder. Bring to a boil. Reduce heat. Cover and simmer for 10 minutes. Serve.
